Baileys Mint Chocolate Mousse
My first contribution to tomorrow night's party is a Baileys chocolate mousse - using Mint Chocolate Baileys! Nom Nom Nom! I didn't make the mousse from scratch because it's not worth the effort when I can buy 500g of premade chocolate mousse for $4.50 - much cheaper than the ingredients alone! This 500g tub, when whipped, netted me 45 chinese soup spoons of mousse, which is more than enough for my purposes.Ingredients:
1 500g tub of Tararua Chocolate Mousse
1/4 Cup of Mint Chocolate Baileys
Lindt 70% Dark Chocolate or any other chocolate (for garnish)
Empty the mousse into a mixing bowl and beat it with an electric beater on high, and gradually add in the Baileys. You should beat for a good 5 minutes, and you'll know when you're done because the mousse will expand in volume, and the colour will pale considerably. A tip for beating with an electric hand mixer is to move the mixer around with a slow whisking motion to encourage air into the mousse. You just want to make sure you don't end up with a snack pack/dairy food looking lump of gloop at the end :)
I used disposable chinese soup spoons for my mousse, because the party isn't at my house, so I'd rather not have to cart any dishes all the way back home, but you might like to use shot glasses, or even meringues or brandy baskets. I used a piping bag and icing tip to transfer the mousse into the spoons without spilling it all over the bench.
Now they're in the fridge chilling, and hopefully setting (fingers crossed). They look a little gross ungarnished as they are, so when I get to the party tomorrow night I'll break out the old dark Lindt and shave some onto the mousse with a potato peeler :)
